can i keep the original steering rack but equip/modify it to make it a "manual" rack???

you can unhook your power steering, but i wouldn't recommend it due to the loss of fluid in the rack. I would perosnally try and find a mechnical rack if you could. If i were to un hook it though i would hook the lines up to a resivoir so that the rack is still submerged in fluid to lubricate, keep the rack clean, help the seals ect. The rack won't wear out easily and won't be bone dry.The expension and contraction of the fluid can be conpensated by the resivoir. You still have the option of flushing the power steering fluid and changing it rather then leaving the rack dry. Like i said i would try and get a manual rack first, but if not try my idea.
