Hmm, if I had the car tuned for say 7 PSI and then turned the PSI down with the adjustment **** for daily driving would that cause any problems? I know in the lower PSI levels it wouldn't be very efficient but running at 7 PSI might be to rough for daily driving.

The variable boost is more of a turbo thing thing since it is a little easier to control the boost levels.
If you had the car tuned to 7 PSI with a daily driver tune on it you should be able to drive around on 3 PSI, the only downside would be it would more than likely be runnin a little rich since it assumes the car is at 7 PSI.
But honestly I wouldn't bother with all that since the boost only kicks in under high throttle situations. The car operates under vacuum until you mash the throttle and the BOV closes and allows the boost to enter the motor. At that point the car will use the tune to run the best and make the most amount of power.
By 'daily driver' tune you are not workin on the limits of what the motor will do. If you have them lean the mixture right out to make the most possible amount of power you are more likely to pop the motor if something goes wrong. When I had my car tuned I had them put in a tune that made power but also wasn't right on the limit so that if something happened it wouldn't fry my mill.
You can run 6 PSI on a stock bottom end without any type of intercooling, with only some other minor mods.
8 PSI can be run but I would not recommend it without some type of cooling, be it either intercooler, methanol, or other types of cooling methods.
Everything I have heard and read is that the weak point in the LT1's is the pistons. They can withstand 9-10 PSI without too much trouble but as soon as you get up to around 12 PSI you are more likely to be in trouble.
