600iso is enough for night photos.. When I take night photos I just set my Iso to 50 (lessgrain) and have long *** shutter speeds, but I use a tripod so no worries.

aperature has nothing to do with how infocus your car will be, aperature is how much it focuses on the main subject. i always get this backwards but a completly open aperature means it with capture everything in the frame in the same focus, so you car and the back ground will be in focus, with a closed aperature it will only capture your main subject, and the back ground will be blurry, or out of focus.
and at night while doing still shots of a car set your iso as low as you can, especially if you have a tripod.
