To check for proper refrigerant charge, I usually just evacuate the system
to check how much is in there. We don't really have that many a/c
problems, so I don't pay all that much attention to the pressure gauges
anymore. Also, as systems use less and less refrigerant, it becomes more
difficult to diagnose using pressures.
That said, I would look for something in the neighborhood of 90psi with
a/c off and 30psi with compressor running. (Give or take, of course).
