Help fighting seat belt ticket

Help fighting seat belt ticket
I got a ticket for not wearing a seat belt last night. I was just wondering if you are able to fight these tickets since I know it will probably come down to your word against the cops. Any advice?
Also, the cop also gave me a ticket for not having a valid drivers licence (HTA Sect. 32 (1) ) but it clearly states on the back of my licence that my licence expires "2007 ~ 09 ~ 05. Any ideas what the hell is up with this? I am going to go to court for this once since it seems pretty cut and dry and I have proof that I do infact have a licence.
Ok, I just went to the local cop shop and she said that my licence has been suspended for a while. I got it suspended for unpaid tickets and went and paid the fine, but they claim I didnt pay a reinstatment fee. The weird thing is they sent me a new licence in the mail and everything. Of course I cant find any reciepts for this ticket (me bign unorganized) Is there anything I can do?

Would them mailing me and giving me back my licence be a valid excuse in court? I had no idea my licence was still suspended since at the MTO they handed me back the licence that I surrendered when I paid the fines, then they mailed me a new one.
